Blast FreezersWhat does blast chilling mean? All fresh organic food products contain a natural bacterial load, which multiplies in favourable ambient conditions (certain temperatures and humidity levels) producing hazardous effects on consumer health. The most dangerous thermal threshold is between +35°C and +65°C: in this temperature range, bacterial multiplication is accelerated. Microorganisms begin to develop between +10°C and +35°C. Positioning of the blast chillers or freezers: This is an important choice not only from the point of view of rules and regulations, but also and above all in terms of working methods. Correct use of the blast chiller limits the weight loss of the product in the cooling phase (positive chilling) which must be performed by lowering the product temperature from +70°C to +3°C as quickly as possible and in any case within 90 minutes. The result will be a soft succulent product that can be kept for longer and, after regeneration, will have all the flavour of a freshly cooked product. The blast chiller also allows you to program your work in the kitchen, using the time to build up stocks for the rest of the week. Correct use of the blast chiller ensures less waste, greater saving on time, higher earnings and a healthy tasty product.

Using a blast freezer will allow foods to have an extended shelf life. One needs to take into account that shelf life is directly related to temperatures that food is cooked at, kept at or exposed to. Why is temperature so important?

At the normal boiling point of 100°C, it equals the standard atmospheric pressure of 760 Torr or 101.325 kPa. As pressure goes down, so does the boiling point. All foodstuffs that have a high volume of liquid (most flesh 60% to 70% water) will be boiling the liquid inside the cells.
